Easy Creole Jambalaya

Moving day.
Dah, duh, duhhhhhh.....
And so in a concerted effort to reduce the amount of food that I'm lugging from the old house to the new house, I'm trying to cook up the ingredients in my pantry and deep freeze. It just makes sense!
This one is easy and oh so good! It takes about 15 minutes of prep time and 15 minutes of cooking time. Viola! Dinner in 30 minutes!
Easy Creole Jambalaya
1 pound smoked sausage (I used Chapel Hill Sausage's smoked garlic sausage. Yummo!)
1 sweet onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
2 tablespoons vegetable oil
2 tablespoons butter
1 cup long grain rice (not the instant stuff!)
1 can fire-roasted tomatoes
1 cup frozen corn
1 cup okra, cut up into 1/2 inch pieces
2 cups low sodium chicken stock
1 tablespoon Creole seasoning (I used Tony Chacheres)
Slice the sausage on the bias into pieces no thicker than 1/2 inch. In a wide, deep pot, melt butter. Add oil and let it heat up. Add sausage, onion, pepper, and garlic. Sauté until the sausage and onions start to brown a bit. Add remaining ingredients. Allow the mixture to come to a boil. Cover, reduce heat, and simmer for 15 minutes until rice is done.
That's it! If you like things spicy, feel free to dump in a bit of cayenne pepper. The Creole seasoning made it spicy enough for our wimpy tongues. ;0)
Sorry there are no pics of the food on this post. I'm sooo busy between taking care of 3 guys with colds, handling the paperwork etc. for getting the new house, normal domestic diva stuff, talking with my lit. agent, battling fleas, planning a first birthday party, checking homework, fixing guitar pedals, doing mountains of laundry, and I'll stop right there. It's making me tired just thinking about it! ;0)
Don't get me wrong... I'm in heaven!
Some days, I wish heaven had maid service. Don't you?
