Happy St. Patrick's Day
Thursday, March 17, 2011 In the words of a famous frog, " It's not easy being green."
But on St. Patrick's Day, there are many ways to celebrate. The weather was so gorgeous here in south Texas today, that we spent most of the day outside.
There is so much beauty in Spring. I love the way everything suddenly seems to burst forth with shades of green.
We have so many little green tree frogs and geckos here! It's unreal! But we are also finding a few snakes. Yikes! But these little white blossoms promise days of sweet treats and purple fingers.

As I've been preparing my vegetable beds, my chickens have been enjoying all of the grub worms that I dig up. My beautiful, chivalrous rooster, Mr. Cock-a-doodle-dude, will not eat the worms. Rather, he will pick them up and carry them over to his hens. What a gentleman! He really is sweet, and he will even let me pet him occasionally.
Our field is brimming with clover. Do I see four leaves?
And I'm thrilled that my cilantro seedlings are beginning to have those characteristic ripply leaves and wonderful smell.
The lemon tree is ready to welcome spring with tons of magenta blossoms that will turn into juicy, large lemons!
To finish off our celebration of our Irish heritage in full south Texas style, I made chicken enchiladas verses, rice and beans, and key lime pie for dessert. My little leprechaun loved the pie! It inspired a new word (pie!) and lots of giggles!
